Hazelnut Peach Pancakes

Recipe Ingredients:
  • 3/4 cup Pacific Foods Hazelnut Original Plant-Based Beverage
  • 2 tbsp. fresh lemon juice
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 tbsp. vegetable oil
  • 1 cup flour or sub gluten-free flour
  • 3 tbsp. granulated sugar
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 3 ripe peaches, sliced thinly
  • 1/2 cup hazelnuts,
  • 3/4 cup maple syrup
  • Combine flour, sugar, baking powder, and salt in a large mixing bowl. In a separate small bowl, combine eggs, Hazelnut Original Non-Dairy Beverage, and vegetable oil; add to flour mixture and stir until batter is smooth.
  • Pour ¼ cup of batter at a time onto a preheated and greased frying pan or griddle. Add sliced peaches while the first side is cooking; flip when dough is bubbly, about 3-4 minutes on each side.
  • In a small bowl, combine maple syrup, hazelnuts, and leftover peach slices. Pour over prepared pancakes right before serving.
